Spicy Pesto Chicken Sandwich

Spicy Pesto, Crispy Chicken Cutlets and Mozzarella on a fresh baked Rustic Roll.





Pesto Ingredients:

2 Cups Fresh Basil

1 Garlic Clove

Juice of Half of a Lemon

1/2 Cup Olive Oil

1/4 Cup Parmesan

1 Tsp Crush Red Pepper

1/2 Tsp Salt

Pepper to taste


Chicken:

4 thinly sliced chicken cutlets

2 Cups Panko Breadcrumbs

2 Tsp Italian Seasoning

1/2 Cup Parmesan

Flour for dredge

3 Eggs beaten

Mozzarella cheese for melting. I recommend sliced fresh mozzarella over shredded, but you can use shredded if you prefer.

Oil for frying

*You can use premade seasoned breadcrumbs if you prefer. I personally find pre-packaged breadcrumbs, except for Panko, have far too many additives and preservatives.


Bread: My video will be out soon for this roll, but you can use any type of bread you prefer.


Step 1: Pesto

In a blender or food processor, combine all the ingredients and blend until you have a nice smooth consistency. You can store in the fridge until ready to use, but make sure to press a piece of plastic wrap against the pesto to help prevent color change.


Step 2: Chicken

Set up your dredge station. Place enough flour on a plate or bowl, beat eggs in another bowl and I recommend laying your breadcrumbs out on a small sheet or large plate. If making your own bread crumbs, combine the panko and italian seasoning in a blender or food processor and blend until completely combined. This also helps to create the texture of regular breadcrumbs.


Heat a large frying pan over medium-high heat with enough oil to cover the bottom. You can always add more as you go if necessary. Working in order, dip each cutlet in flour, egg and then the breadcrumbs. We are only doing one coating. Just make sure to press the bread crumbs into the chicken to ensure a nice coating.


Place cutlets in the frying pan. This should take around ten minutes total, but I recommend having an insta-read thermometer to ensure the chicken is fully cooked to 165F. Turn cutlets when you start see a slightly dark color and sprinkle with salt. If it's browning too fast, turn heat down a little bit.


Step 3: Melt Cheese and Build Sandwich

Place chicken on a cookie sheet and cover with cheese. Place under the broiler until melted and slightly brown.


Spread both sides of whatever bread you're using with the pesto, layer your chicken cutlets and enjoy!
