*These oat flour cookies are gluten free.
One of the keys to this cookie is using chopped chocolate bars instead of chips. Those little chocolate flecks/dust from chopping the chocolate adds another dimension of flavor.
1 Cup (227G) Salted Butter (Softened)
1 Cup (200G) Granulated Sugar
1 Cup (220G) Light Brown Sugar
3 Cups (360G) Oat Flour*
1 Tsp Baking Soda
1/2 Tsp Baking Powder
1 Tsp kosher salt or sea salt
1 Tbsp Vanilla
2 Large Eggs (Room Temp)
150G Chopped Milk Chocolate
150G Chopped Dark Chocolate
100G Toffee Bits (I used Heath brand, but you can use any kind of toffee)
*Oat Four - If you can't find oat flour, you can blend oats in a blender.
Combine all dry ingredients (except for chocolate and toffee) and set aside.
Chop chocolate into medium sized chunks, but you can leave them as big or small as you like. Set aside)
You can use a hand mixer or stand mixer. In a bowl, cream together the butter and sugars. This should take about two minutes until it's fully combined and smooth.
Add in eggs, vanilla and mix until pale and fluffy.
Mix in dry ingredients until JUST combined and cohesive. You don't want to over-mix.
Add in your chocolate and toffee until fully incorporated.
Cover the dough, in a bowl, with plastic wrap and store in the fridge for AT LEAST an hour, up to 24 hours. The longer you keep it (under 24 hours) the better the flavor.
Remove dough from fridge and allow ten to fifteen minutes to soften from being in the fridge and at the same time pre-heat your oven to 375F.
Line a cookie sheet with parchment paper or silpat and make cookie balls around three tablespoon's worth. A cookie scoop works best, but you can roll with your hands. Keep them two inches apart, as they will spread.
Bake 10 to 12 minutes. You want to take them out JUST as the edges start turning brown. They may look under-done, but they're not.
Let cool for a few minutes before moving to a rack as they will be very fragile at first, but firm up well after a few minutes.
Let cool around ten to fifteen minutes and then ENJOY!
These look really good Josh. I love using oat flour in my chocolate chip/ chunk cookies. Such a nice flavor profile. Can't wait to test these out.
