Beer Braised Pulled Pork (adapted from Delish):
This pulled pork recipe is so easy and so delicious.
4 LB boneless pork shoulder or pork butt
18 oz Beer Lager or Amber, something on the brown side of beer (about a can/bottle and a half)
BBQ Dry Rub (Store bought or make your own)
Two drops of liquid smoke (Optional)
Step 1:
Preheat oven to 300F. Cut pork into medium size chunks and toss in rub until completely coated.
Step 2:
In a dutch oven or deep pot, put about a tablespoon oil and heat over high. Working in batches, brown all sides of the meat. You're just looking to get some nice deep color, but not cook through completely.
Step 3:
If a burned fond forms on the bottom of your pot, you can de-glaze with some beer. Once de-glazed, clean out and return all meat to the pot and pour in the beer. Cover pot and place in the oven for three hours. After three hours, remove lid and cook for another one to hours or until it's fork tender.
Step 4:
You can serve this many ways. Mix with a BBQ sauce for sandwiches, place over nachos, etc...
