This banana bread is gluten-free and uses a small amount of added sweetener. This is not an overly sweet bread, so you can increase the sugar if you like.
Ingredients:
4 Medium Overripe Bananas mashed
1/3 Melted Butter
1/2 Cup Honey or Maple Syrup
1 Egg beaten
1 Tsp Vanilla
1 Tsp Baking Soda
1 Tsp Baking Powder
1 Tsp Xanthan Gum
1/4 Tsp Cinnamon
1/8 Tsp Salt
250G Oat Flour
1 1/2 Oz. Bourbon
Optional:
1 Cup Chopped Walnuts
1 Cup Chocolate Chips
Step 1:
Preheat oven to 350 degrees F.
In a bowl add mashed banana, maple syrup, butter, egg and vanilla. Stir until combined.
Step 2:
To the same bowl add oat flour, baking powder, baking soda, salt and cinnamon. Mix until just combined.
Step 3:
Prepare a loaf pan, preferably around 8.5x4.5 inch. A larger pan will create a flatter bread. You can either grease this with butter, non-stick spray or as I did, you can spray it and then line it with parchment paper. Pour batter into the pan and smooth out the top.
Step 4:
Bake 50 to 60 minutes or until a toothpick comes out clean. Allow to cool completely before eating.
