Chorizo and Egg Breakfast Sandwich

Ingredients:

Brioche Bun

1 Egg

About 1/2 cup ground Chorizo sausage

Cotija Cheese

Mexican Crema


Step 1:

Pre-heat oven to 200F degrees. This is so you can keep chorizo warm while cooking the egg.


Step 2:

Toast bun in pan, no butter.


Step 3:

Fry chorizo until thoroughly cooked. Place in an oven-safe dish and in the oven to stay warm.


Step 4:

Fry egg to your liking. I prefer over-easy/over-medium to get that lovely yolk.


Step 5:

Build sandwich

- Spoon chorizo on the bun

- Drizzle with crema. How much you use depends on your taste, but I just did a light drizzle to cover the chorizo.

- Sprinkle with cotija cheese. Again, how much you use can depend on your taste, but I use just enough to get a nice layer

- Finish with egg and top bun.
